2 Cans, Cream of...

5 days in a row of trial run casseroles for freezing and I'm dreaming of biting into something that you have to really chew. Like a steak or even a hot dog!

We're O.D.ing on cream of chicken soup here. (Why DOES every casserole have either cream of some soup and grated cheese in it?) We've explored the many casserole toppings including tater tots, corn flakes and stuffing.

We've had some bigger winners, especially, my friend Joanne's "Beaulieu Kid's Favorite Chicken and Rice Casserole" or better know as "4 out of 4 casserole". At our house it was 8 out of 9.

Running a close second was Julie's, "Spaghetti Pie".

So we've picked the favorites and I'm freezing them in case we get the call for Grace's transplant.
Anyone out there have a freezable casserole dish that doesn't have a can of soup in it?

It's not a casserole, but it's real easy to make and you can freeze it.

CHILI BEAN SOUP
1. Mix together - 3 cups tomato juice, 1 cup water, 1 packet taco seasoning mix, a 16 oz can refried beans, 1 16 oz jar salsa.
2. Bring to a boil, then reduce heat and simmer 15 minutes.
That's pretty much it.
When you get ready to eat it, garnish with shredded cheese, shredded lettuce, crumbled tortilla chips, sourcream, etc.

Big hit with Joanne and kids.

Firecracker Casserole can be modified, without the cream of mushroom, it'd be black bean casserole or something. Let me know if you want it, I think it;s on my blog somewhere but I can email it to you too.

If you're interested in skipping the casseroles, just get some of the big bags of chicken thighs and quarters. Boil the entire bagful of chicken, let cool and strip the meat off the bones. You can freeze just the meat for a quick add to many meals (Bizquick chicken -n-dumplings, Chicken Helper, fried rice, chicken salad sandwiches, etc),

or you can pre-season it with lemon juice and fajita seasonings. Then either freeze just the chicken in freezer bags or you can preroll flour tortillas filled with chicken and shredded cheese for q quick easy snack or meal.

You can also fill tortillas with other things like: diced potatoes fried, mixed with scrambled eggs and crumbled sausage. Mix all that up and fill tortillas. We add Louisiana hot sauce here, but not many people like em hot.

Also get eggroll wrappers and fill with your favorite egg roll fillings, cook in hot oil - they freeze pretty good.

Salmon patties freeze pretty well, so do hamburger patties. Pancakes do too.

Check out a book called "Frozen Assets" either from your library or buy from Amazon or Alibris. It's chock full of frozen meal ideas.

Because putting gobs of cheese or cream soup makes it not so gross to be eating all your foods thrown together.
